Lemon Chicken Orzo

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 lemon, zested and juiced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup orzo
  • 2 cups chicken broth

Directions

  1. Pat the chicken breasts dry and season both sides with the garlic powder, onion powder, paprika, salt, and pepper. Zest the lemon over the chicken and rub everything in so it coats evenly.
  2. Heat the olive oil in a large skillet over medium-high heat. Once shimmering, add the chicken breasts. Sear undisturbed for 5–6 minutes, then flip and cook another 5–6 minutes until the internal temperature reaches 165°F. Transfer to a cutting board and let rest for 5 minutes.
  3. While the chicken rests, bring the chicken broth to a boil in a medium saucepan. Add the orzo and cook, stirring occasionally, until tender and most of the broth is absorbed, about 9–10 minutes. Remove from heat and stir in the lemon juice.
  4. Slice or dice the chicken. Serve over the orzo and finish with a little extra lemon zest if desired.
